PRAIRIE VIEW, Texas (May 20, 2025) — Janet Antwi, B.Pharm, MS, Ph.D., RD, LD, ACUE, assistant professor in nutrition and dietetics, in College of Agriculture, Food, and Natural
Resources (CAFNR) at Prairie View A&M University has received a nearly $90,000 grant from USDA-NIFA. The funding will support her research on climate-smart ways to produce food ingredients and agrochemicals that boost rural health and economic growth.
This project will advance the use of prickly pear cactus (PPC) as a nutritious, sustainable, drought-resistant crop through applied research, student training, and community outreach. By investigating PPC cultivation, processing, health benefits, and consumer preferences, we will generate knowledge that supports resilient food systems. Findings will be shared through extension-based workforce development, landowner education, and targeted outreach to veterans, women, and farm and ranch owners.
The project also provides high-impact learning for students via course-integrated research during spring and fall semesters.
