Beverly Copeland

Dr. Copeland has a diverse set of skills and extensive administrative knowledge that prepares her well to lead a division that spans so many areas of college life including, among many others, residential life, student conduct, student mentoring, international education, student health and development, and so on. As the Associate Professor of Nutrition, she currently serves as Assistant to the President in the Office of the President where she is responsible for student matters that require the attention of that office. In this administrative role, she also serves as principle liaison to the A&M System Chancellor’s Office and the Board of Regents. As staff to the President’s Cabinet, the Executive Committee and the President’s Advisory Council, she is knowledgeable about the full breadth of programs and priorities at the University.

Beverly earned a Bachelor of Science in Dietetics from Prairie View in 2003 and a Master’s Degree in Human Sciences in 2006. She received a Ph.D. in Nutritional Sciences from Howard University in 2011. After joining the Prairie View faculty in 2013, she served as Program Director and Coordinator of the Undergraduate Nutrition Program. In addition to her role as a faculty member, she served as Speaker of the Faculty Senate where she worked to strengthen and broaden the faculty’s role in university governance. She has participated in several leadership programs including the Agri-Life Advanced Leadership Program, the Texas Leadership Academy and, most recently Harvard University’s Management and Leadership in Education Program.
