PRAIRIE VIEW, Texas (January 13, 2025) — Rahmat Attaie, Ph.D., an Associate Professor and research scientist at Prairie View A&M University, has been awarded nearly $300,000 in grant funding from the National Competitive program of the USDA National Institute of Food and Agriculture to explore innovative approaches to combat obesity.
The research team includes co-principal investigators Janet Antwi, Ph.D. (PVAMU); Maryuri T. Nunez de Gonzalez, Ph.D. (PVAMU); Susanne Mertens-Talcott, Ph.D. (Texas A&M University); Steve Talcott, Ph.D. (TAMU); and Selamawit Woldesenbet, DVM (PVAMU). Together, they aim to address one of the nation’s most pressing health challenges.
Obesity affects one-third of U.S. adults and 17% of children, significantly increasing the risk of chronic conditions such as hypertension, type 2 diabetes, and cardiovascular disease. This project focuses on fucoxanthin, a natural carotenoid known for its anti-obesity properties, as a functional ingredient in goat milk yogurt. Through a 12-week clinical trial, the study will assess its effectiveness in promoting weight loss, improving body composition, and regulating lipid profiles in overweight and obese adults.
The research aligns with USDA priorities in diet, nutrition, and chronic disease prevention by advancing the development of nutrient-dense, functional foods. Its findings could lead to innovative strategies for addressing obesity and enhancing public health outcomes.
