Human Nutrition & Food

The Bachelor of Science Program in Dietetics contains three concentrations: the ACEND-accredited Didactic Program in Dietetics for students interested in becoming a Nutrition and Dietetic Technician, Registered (NDTR) and/or applying for a Dietetic Internship post-graduation; the Health and Wellness track for students interested in careers in health promotion and fitness; and the Food Service Management track for students interested in careers within the foodservice and hospitality industry.

All students must complete a semester-long professional work experience internship for course credit (HUNF 4303 Human Nutrition and Food Practicum) in a position related to the field of nutrition and dietetics. This professional work experience enhances and complements classroom learning. Upon completion, the preceptor or supervisor evaluates the student, and the student submits a portfolio of their work. Students may secure their own internships (subject to approval by the program director), or they may complete their experiential learning through agencies and partners available on the PVAMU campus.

The Registered Dietitian Concentration is an ACEND-accredited Didactic Program in Dietetics (DPD) that provides a strong science foundation and the opportunity to participate in cutting-edge clinical applications that qualify students to apply for a dietetic internship or pursue advanced degrees in nutrition. This program does not include an internship experience. Students interested in becoming registered dietitians must apply to an internship at another program after graduation.

Graduates completing these steps are in high demand. Employment opportunities include positions in clinical dietetics (hospitals, nursing homes, and outpatient facilities), community and public health nutrition (WIC and extension positions), food service management, food industry, nutrition communication/journalism, corporate wellness programs, marketing, supermarkets. Other positions include positions in sports nutrition, research and education, government, and private practice.

The Food Service Management Concentration prepares students for careers for leadership roles in the delivery of food service industry. It is dedicated to studying the operational issues that lead to profitability in a food service operation. Students examine the food service industry from the perspective of management, food preparation, leadership knowledge and skills to further their careers in the hospitality industry. Career options Students prepare for careers in the restaurant industry, food service facilities or food distribution services.

Suggested Course Sequence

Courses in the Health and Wellness Concentration are designed to help students understand and implement health promotion and disease prevention and promote healthy lifestyles through behavioral changes. Career Options for students in this concentration include, health promotion specialists, health inspectors, wellness directors, and physical activity and exercise and fitness leaders.
