The incidence of obesity, diabetes, cardiovascular diseases, and certain types of cancers have increased in the society. Appropriate nutritional regimen with some biofunctional ingredients can mitigate the prevalence of these diseases. We are developing goat milk based dairy products that have fucoxanthin, a biofunctional ingredient with anti-obesity activity from marine carotenoids. The goat milk dairy products supplemented with fucoxanthin should have acceptable sensory characteristics and reasonable shelf-lives. Currently, we are developing fucoxanthin supplemented goat milk yogurt with acceptable textural and flavor characteristics to assess its anti-obesity activity in humans.
