Structure-functionality relationships in foods, with emphasis on food proteins, polysaccharides and lipid complexes. Nuclear magnetic resonance (NMR) spectroscopy of protein-water interactions. Molecular models of proteins in highly hydrated forms. Fourier-transform infrared (FTIR) spectroscopy of proteins. Nanoscale production systems and technologies for the optimum delivery of lipophilic bioactives such as lutein, coenzyme Q10, docosahexaenoic (DHA) and eicosapentaenoic acid (EPA).
