December 6 – The Cooperative Extension Healthy Initiative in Houston hosted some exciting events during Prairie View A&M University’s (PVAMU) 2021 Homecoming Week. From November 1 to November 6, 2021, students, faculty, staff, and PVAMU supporters returned to campus for various events.

On Tuesday, the Healthy Initiative spiced up May Hall with a CHOPPED food challenge program series featuring PVAMU students. Two student teams received four ingredients they were required to incorporate into their dish. They had 45 minutes to prepare a full meal. Meals were to combine chicken breast, purple cabbage, mandarin oranges, and sweet potatoes. The judging categories were presentation, taste, teamwork, cleanliness, and creativity.

CEP’S Healthy Initiative also rolled out its Mobile Kitchen Unit and Smoothie-Bike for tasty activities. Program staff members served okra, stew, and rice from the Mobile Kitchen Unit and offered students free fruit and vegetable smoothies and a workout. The Smoothie-Bike is a stationary bike that blends smoothies through the power of pedaling.

On Thursday, November 4, the Healthy Initiative closed out its CHOPPED series with another challenge, this time for PVAMU faculty. The three participating teams were: the Free Application for Federal Student Aid (FAFSA), and two departments from the College of Agriculture and Human Sciences (CAHS), “The Farmers,” and the Agriculture Nutrition & Human Ecology department. In the end, Team FAFSA was declared the winner.

Homecoming Week ended Saturday, November 6, with a university-wide parade. The Healthy Initiative’s Mobile Kitchen Unit followed behind the CAHS parade float. Program members used the mobile kitchen to prepare and serve small bags of healthy trail mix to parade spectators.
