Update on MeatlabMarch 30 – The Governor Bill and Vara Daniel Farm and Ranch is adding exciting components to its overall operational capabilities to stay on top of new and useful agricultural knowledge for use by scientists, students, extension agents, and the clientele we serve. One new addition is the Meat Processing Facility located just south of the International Goat Research Center. This almost 9000 sq. Ft. facility will give us the capability of developing value-added goat and beef products like blended sausage products, goat jerky, and other custom products. In addition to product development, this facility will allow us to incorporate the use of this facility in our academic programs. We may also be able to partner with the USDA to hold workshops for students interested in becoming certified meat inspectors. This facility can also generate program dollars by scheduling time for use in slaughtering livestock for producers. Student-workers will also be an essential labor resource in the operation of this facility.

We look forward to its official opening sometime in the summer of 2020.
