Key Interests

I have conducted research in dairy technology, dairy chemistry, food flavors, food preservation, and product development such as in ice creams, cheeses, and yogurts from goat milk. Additionally, I have performed research in prolonging shelf-life of foods using goat milk proteins as stabilizers. I have authored numerous articles in peer-reviewed journals.

OVERSEAS EXPERIENCE:

2010 – 2011: Senior Agricultural Development Specialist in Afghanistan.  Worked under

Task Force for Business and Stability Operation (TFBSO) program through the Norman Borlaug Institute of Texas A&M University system.  The mission for Afghanistan was to design, develop and/or implement agricultural projects in Herat, Afghanistan to increase food production, create employment and bring stability.  I worked on infrastructure projects promoting food production and processing in Herat.

  1. Cheese making Techniques at Goat Field days in the International Goat Research Center at Prairie View A&M University (every year).
  2. Soft Goat Cheese Making Techniques (In Presidio Valley, Texas, in 1995 & 1996).
  3. Handling of goat milk under hygienic conditions (In Uvalde, Texas, 2008).

International Workshops:

  1. Goat Cheese Processing, Hygiene and Sanitation of Processing Plant. Intensive teaching for one week from March 18 to 22, 1996 at the National School of Agriculture of the Ministry of Agriculture in El Salvador. Sponsored by the USAID and Cooperative League of the U.S.A.
  2. I presented a workshop at the Caprine Conference and Expo on November 13-15, 1999, in Gomez Durango, Mexico. The topic of the workshop was Commercialization of Goat Milk Products
  3. Presented a seminar on Quality and Manufacturing Techniques of goat milk ice cream in the International Caprine Exposition at Salamanca, Mexico in April 24-27, 2002.
